Smoked Potato
Kielbasa Skillet
INGREDIENTS
1 lbs red potatoes, cubed
¾ lbs kielbasa, sliced into ¼ inch slices
½ cup chopped onion
1 tablespoon olive oil
2 tablespoons brown sugar
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
½ teaspoon dried thyme
¼ teaspoon black pepper
4 cups baby spinach
5 bacon strips—pre cooked and crumbled into bits.

4 cups baby spinach
5 bacon strips—pre cooked and crumbled into bits.
Boil potatoes for 5 minutes or until tender
Coat skillet with olive oil.
Add kielbasa, onion and potatoes.
Place on smoker/grill at 250 degrees for 20 minutes or until potatoes
start to brown. Stir continuously.
Combine the brown sugar, vinegar, mustard, thyme and
pepper. Stir into skillet. Cook for another 10 minutes. Add spinach and bacon. Cook until spinach is wilted. Stir continuously.
