Pork Quesadillas
– Great
for leftover pork – quick n’ easy
1/2 pound shredded
barbecued pork- warmed – approximate
1/2 cup barbecue
sauce – use your favorite
flour tortillas – we use medium size
½ sliced
red onion
1 cup shredded
Mexican four-cheese blend
2 tablespoons butter or margarine – buttah’ makes it
better
2 teaspoons olive oil
Toppings: sour cream
Preparation
Carmelize onion using butter and olive oil –
move to side
Place a pat of butter in pan
Place tortilla in pan – cover with
pork/onion/cheese/barbecue sauce
Place a second tortilla on top of the
pork/onion/cheese/saucy goodness
Heat 2 or 3 minutes and then CAREFULLY do the
‘flip’
Heat another 2 or 3 minutes
Remove from pan and cut into triangles
Top with a dollop of sour cream
Crack a beverage and ENJOY!
