¾ lbs kielbasa, sliced into ¼ inch slices
½ cup chopped onion
1 tablespoon olive oil
2 tablespoons brown sugar
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
½ teaspoon dried thyme
¼ teaspoon black pepper
4 cups baby spinach
5 bacon strips—pre cooked and crumbled into bits.

Boil potatoes for 5 minutes or until tender

Coat skillet with olive oil.  Add kielbasa, onion and potatoes.   Place on smoker/grill at 250 degrees for 20 minutes or until potatoes start to brown.  Stir continuously.
